Yes! The only day when you can munch on stacks of pancakes guilt-free has finally arrived – happy Pancake Day, lovelies!

Today we’re sharing our best-loved pancake recipe. The delicious combination of blueberries and cinnamon adds a burst of flavour to a batch of breakfast pancakes – flippin’ yummy!

Ingredients:

• 1 cup flour
• 2 tbsp sugar
• 2 tsp baking powder
• 1/2 tsp salt
• 1 tsp ground cinnamon
• 1 cup milk
• 2 tbsp vegetable oil
• 1 large egg
• Fresh blueberries
• Maple syrup
• Frying pan
• 2 Mixing bowls
• Whisk

Step 1
In a small bowl, whisk together flour, sugar, baking powder, salt and ground cinnamon. In a large bowl, whisk together milk, oil and egg.

Step 2
Add the dry ingredients to the wet ingredients. Whisk until the mixture comes together.

Step 3
Heat your frying pan over medium heat. Spoon 3 tbsp of batter in a circle on the pan. Sprinkle a few blueberries on the top of the batter. Cook the pancake until bubbles form on the top. Flip and cook the other side. Serve with fresh blueberries and warm maple syrup. Yum!
